OPEN Installation Office 365 instead of all older versions (Office 2021, 2019...)

We are planning to remove all older versions of Microsoft Office and deploy Office 365 via MECM, as all users now have E5 licenses.
What is the best practice to do this using MECM?
Will users be prompted to save their work and close all applications during the installation, or can this be enforced automatically?
And will older Offices be uninstalled?
