NEW Help in Managing SCCM / Device Collection / EndPoint Protection Deployment Updates

Hi There,
I almost finished all the required setup and pushed the SCCM to the majority of the servers, clients and macBooks... now it comes to the management / organizing the interface so at least I can stay more focused.
I have all the clients / servers / desktops are categorized between the default All Systems and All Desktop and Server Clients. What I wanted is to split / Clients computers into saprate Collection like (Staff Collection) Servers, into a separate Device Collection (Servers) , Domain Controllers into a Domain Controllers Device Collection.. and likewise for MacBook devices into a saprate device collection for Mac Only.

How can I ensure that all the Software Updates related to the EndPoint protection are applied to all these collection...?

Is it possible to create more that one Update Policy for each collection...?

Will it be possible to push certain templates such as the Domain Controller Template into to the Device Collection related to the Domain Controller...?

Highly appreciate your guidance on this matter a I really want to stay focused on my day-to-day activities more precisely.
