PENDING Windows 11 Start Menu customization

Working with Windows 11 and MECM/SCCM trying to decrapify the OS. have removed the appx and cleaned up the start menu. Once it touches the internet things come back.
Need to remove the bloatware that comes with the OS and create a custome start menu.
Not finding much in the search... (not that actually worked anyway)
Suggestions?

There are many scripts available in GitHub that can help remove the unwanted apps on Windows 11.
