Hi, I'm setting up a new SCCM environment from scratch. We have about 1100 W10/11 clients and 400 windows servers that we'll manage across 2 cities. Which servers would you recommend and how would you recommend I have the roles ditributed among the servers?

This requires a proper planning before you implement it. Hire a consultant to get it done properly. From my end, I can provide some suggestions. Ideally, a single primary site can handle the clients in your organization. Your primary site server and DP being at the main site, the other site can have a DP locally installed to manage the clients for that site.
