PENDING ConfigMgr PXE

Hi Prajwal,
I am new to SCCM, the person who used to take care of SCCM, has left. can you help me with the SCCM issues I am getting.
we are trying to upload the devices from windows 10 21h2 to win11 23h2.
We use MDT to capture and sccm to deploy, manage the upgrades. For some reason the MDT is not working even after upgrading to MDT v8456, ADk and WinPE v10.1.25398. Also tried with WINPE lower version
Then I drop the idea to capture via MDT. Now we are trying capturing via SCCM, but sysprep is keep failing on Microsoft AppxPackages. I am removing all the AppXpackages, sysprep is complaining about, however it breaks my device eventually.
In all that, PXE stop working. I am attaching the logs here; can you please have a look and guide me. we are on configmanager 2409. I am going to apply the hotfix today https://learn.microsoft.com/en-us/intune/configmgr/hotfix/2409/30385346 and will try remove and readd the Management point as you advised in your articles.
I really appreciate your advice here.

Are you using wds by chance? Do you get a different outcome if you use sccm PXE Responder service?
Have you installed ADK and WinPe tools for windows 11?
Have you tried rebuilding the boot.wim?
have you mounted the boot.wim and checked for those deleted files
